Carrot production in Arizona has increased significantly during the past five years. Unlike most vegetable crops, carrots can be harvested at different times in the growing cycle depending on size required. Water stress causes carrots to become woody and hard and too much water causes poor color and rot. This publication provides information on how to water carrots.
