EFNEP Success Stories 2018-2019 - Pima

The following stories are examples of how the University of Arizona Cooperative Extension EFNEP program is impacting participant lives in Pima County.

  • EFNEP Class at Erickson Headstart - Ivonne Martinez, Instructional Aide - EFNEP
    • While teaching a series of our EFNEP classes, one of my participants, a mother’s at Erickson Head Start told me that since beginning our classes when we spoke about serving sizes she has been cutting down in her eating; Eating less bread, tortillas and rice and eating more veggies, she realized she was eating too much and she has been losing weight and feeling much healthier.
       
  • EFNEP Class at Oyama Elementary School - Martha Escobar-Gil, Instructional Specialist - EFNEP
    • While teaching a series at Oyama Elementary school, one of the participants (a young mother) shared her story of how she had tried to cook brown rice at home unsuccessfully and had begun to just get rid of it every time she got it in a food box... I set up a lesson on Grains to include making brown rice in the classroom to show the mothers an easy way to cook it... this mother was so happy to try the brown rice in class and excited to try making it at home after she learned how... she returned to the class to say she made it at home and it turned out delicious! She was excited to report her children love the rice and she can't thank me enough for showing her how to make it. She is grateful to our program because she will no longer get rid of the brown rice she gets in her food boxes.
       
  • EFNEP Class at Santa Rosa Elementary School - Michelle Rico, Instructional Specialist - EFNEP
    • At Santa Rosa Elementary school, I had a Mom tell me that bringing home the importance of eating healthy and planning meals together as a family has been one of the best changes for her family. Her young daughter asked her, “If Moms love their children why do they allow and buy unhealthy food for their family?” She told her daughter and her family that “she is learning how to be a better Mom!”
       
  • Wildcat Summer Cooking Camp at Robles Junction - Joanie Contreras, Program Coordinator,Sr. - EFNEP
    • While teaching a Summer Cooking camp in Robles Junction, one 13 year old told me what an impact the cooking class made on her life. She was thrilled to be able to prepare food at home and make it herself, food that will be healthy and not prepackaged or frozen that I have to use the microwave for.
